During this time, we are busy with what to make for dinner and what can we make with the food we have on hand.  Many of us keep some of the usual baking supplies but what can we make that is tasty and delicious and maybe even comforting.  For Easter I was looking for a treat that was tasty and special \u2014 that I could make with the pantry ingredients on hand.  I went through my handwritten recipes and found my mom\u2019s coffee cake recipe!  With all due respect, her cake recipe came from an old recipe book from the 1960s!  This is a nice \u201chearty\u201d cake that is perfect for a Sunday Brunch or when company calls. With us being quarantined, it is also perfect for a delicious afternoon tea or coffee cake \u2014 hence the name.  It makes a small cake and no icing required and I believe your family with be grateful for this bit of love from the oven.<\/p> <\/p>\n\n\n\n

The recipe may look challenging to some \u2014 it calls for a cinnamon butter streusel that you mix up separately\u2014 it may take two bowls but the results are worth it.  It is actually very easy and doesn\u2019t require any appliances to mix up.  It tastes amazing fresh and warm from the oven or it will keep for several days and you can microwave a slice for 15-20 seconds to get that streusel warmed and buttery. Of course, if you have a family to feed — I doubt it will last long! The recipe is at the bottom. <\/p>\n\n\n\n

You may notice in the pictures of the streusel mixture, there is about a 2 tablespoons of unsweetened coconut flakes that I added to this version of the cake. I liked it but it is optional and I think I prefer without it. When you test the cake for doneness, test in a non-streusel area to ensure its not over-baked.<\/p>\n
